It may simply not be busy enough to keep all three areas open 24/7. {He hums thoughtfully.} For staff....at minimum with everything up and running, two cooks, two waitstaff, a bartender behind each bar counter, a VIP attendant, two on music and lights, plus the two of us filling in as needed. As a conservative not very busy, but a small steady stream of guests guesstimate.

That would be preferable. Less gross out for our eating and drink patrons, but the ominous clicking of their bones could still serve as a disturbing deterrent to unwanted intruders.
