Breakfast 24/7 sounds delicious. Are you thinking diner style or Food Network competition style breakfast?

I would suggest limiting the club hours, if not the V.I.P. lounge hours, too, at first until you see how well the whole set up does. It may simply not be busy enough to keep all three areas open 24/7. {He hums thoughtfully.} For staff....at minimum with everything up and running, two cooks, two waitstaff, a bartender behind each bar counter, a VIP attendant, two on music and lights, plus the two of us filling in as needed. As a conservative not very busy, but a small steady stream of guests guesstimate.

And oh, potentially a couple of bouncers depending on how attentive to security you want to be personally.
